Roasted Pumpkin Ginataan

Ingredients:

Sauce

1 L Coconut cream

2 stalks lemon grass, pounded

1 onion, chopped

3 cloves garlic, chopped

1 thumb size ginger, chopped

Method:

* Sweat the onion, garlic, then the ginger

* Add the coconut cream and the lemongrass. Let the flavor infuse

* Remove the lemongrass and blend the infused coconut cream

* Season with pepper and fish sauce

Vegetables

200g snake beans/green beans, trimmed, cut 2 inch

1 medium sized pumpkin, wedge

1 small piece bitter gourd, sliced

Method:

* Cut the pumpkin into wedges. Cook both sides of the wedge until caramelized, Cook in the oven at 180C for approx 20 to 30 minutes depending on thickness

* Soak the sliced bitter gourd into salted water for about 15 minutes. Strain the water and rinse the gourd further.

* Blanch the green beans in salted water
