Chicken Binakol

Ingredients:
500g Chicken Breast, Cut into strips
A thumb of ginger, Sliced into strips
1 pc onion, sliced
3 cloves garlice, chopped
2 stalks lemongrass, pounded
500ml coconut water
250 g coconut meat
white pepper
Fish Sauce
1.5L Chicken Broth
1 bunch shallots, sliced
Chili leaves/Spinach
Coconut shells (optional), Cut in half, water saved, white flesh saved
Method:
* Heat up chicken broth in a pot and add the lemongrass. Let it simmer until the flavors are infused
* In a separate pot, sweat the onions, garlic and ginger until fragrant. Add the coconut water.
* Add the heated chicken stock into the pot with sweated aromatics. Season with fish sauce
* Cook the chicken strips in the broth until the meat changes color
* Add the leaves and the coconut meat and bring to a boil
* Serve using the coconut cups (if available)
