Ingredients
500ml thickened cream
1 can condensed milk (395g)
3 teaspoons of ube extract
1 cup ube halaya or ube jam
Method
Whisk and mix together condensed milk, ube halaya, and ube extract in a medium
bowl.In a separate large bowl, using a hand held or stand mixer whip the cold thickened
cream until medium peaks form.Fold in the ube halaya and condensed milk mixture to the whipped cream until
incorporated and continue to whip the mixture to stiff peaks.Spread mixture into an even layer in a freezer safe container. Cover with plastic wrap
and freeze overnight.Makes about 1.4 liters.
