Ube Waffles with Ube Cream Cheese drizzle

Ingredients:
For Ube Waffles
30gm Ube powder
150gm self raising flour
1 egg
100gm milk
15gm melted butter
15gm sugar
For Ube Cream Cheese Drizzle
60gm Ube powder
112gm Cream Cheese (room temperature)
150ml thickened cream
30gm honey
5ml ube extract (optional)
Method:
Waffles
Place all ingredients in a bowl and mix well.
Pour a quarter cup of batter into a hot pan and cook the pancakes until bubbles.
appear on top. Flip the pancake and cook until lightly browned/golden.
Place on a plate and continue cooking the rest of the batter
Ube Cream Cheese Drizzle
In a small pot, place the cream cheese and thickened cream together and mix well with a wire whisk.
Place the pot over low heat, add in the ube powder, honey and ube extract if using.
Mix well and let it simmer - do not boil.
Assemble the stack of pancakes and drizzle with the ube cream cheese sauce.
Garnish and serve with fruits in season.
